Marshmallow Brownies

These Marshmallow Brownies are a real treat. Fudgy brownies are topped with toasted marshmallows and a sweet chocolate icing. These chocolaty darlings will be a hit with basically everyone.

Ingredients

For the brownies:

  • 1/2 cup (4 ounces) unsalted butter
  • 6 ounces semi-sweet chocolate chips
  • 1 cup caster sugar
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup flour
  • 1/4 cup cocoa powder
  • 1/2 teaspoon salt
  • Approximately 2 cups mini marshmallows

For the icing:

  • 1/4 cup (2 ounces) unsalted butter
  • 1/3 cup cocoa powder
  • 2 cups powdered sugar
  • 1/4 cup milk

Instructions

For the brownies:

  1. Preheat your oven to 350 F (175 C) and line an 8x8 inch baking pan with parchment paper.
  2. Add your chocolate chips and butter to a small saucepan and place over the lowest possible heat. Stir frequently until melted and set aside to cool for about 10 minutes. You could also do this in the microwave, stirring in 30 second intervals.
  3. Add eggs and sugar to a large mixing bowl and beat with an electric mixer for about 3 minutes or until pale and fluffy. 
  4. Add the chocolate mixture to the eggs, and fold this in with a rubber spatula. Then stir in the vanilla extract as well.
  5. Sift your flour, cocoa powder, and salt over the batter, and fold in the dry ingredients. When everything is fully combined, transfer the batter to your baking pan.
  6. Bake for 25-30 minutes. You want the brownies to be set but not hard around the edges. Check them at 25, and if there's no wobbles, go ahead a pull them out. Brownies are always better underbaked than overbaked.
  7. Scatter your mini marshmallows on top of your brownies forming a single layer. You can either switch your broiler on and pop them back in the oven for a minute or two or use your kitchen torch to toast the marshmallows. You're looking for golden brown, not charred.

For the icing:

  1. Melt the butter in the microwave or over the stove, then add it to a mixing bowl. Then whisk your cocoa powder into the melted butter.
  2. Add your powdered sugar and milk, and gently whisk to make a smooth icing. 
  3. Pour this over your brownies and gently spread it to the edges. You'll want to work fairly quickly before the icing sets.
  4. Let your brownies cool completely or better yet, chill them in the fridge for at least 4 hours before slicing and serving.
