I have no idea how it's May already, but this is happening. Here's your May 5 Day Meal Plan with five dinner ideas, plus a weekend breakfast, dinner, and dessert. Each one is more awesome than the next.
I'm dreaming of nicer weather, outdoor gatherings, and the opportunity to share food with friends again. This is Scotland, so there's no guarantee about the weather, but I know I'm ready to move into slightly lighter fare, and maybe a little grilling. Let's get into it.
What's for dinner?
For Meatless Monday, you need an Indian Spiced Pea & Potato Wrap. Veggies and spices get wrapped up in paper-thin phyllo dough, then baked until crisp. Serve it with your favorite mango chutney.
It's never not time for pasta in my world. This Chicken & Goat Cheese Pasta is great for spring. The fresh rosemary is my favorite part. Serve it with some garlic bread because that's always the right thing to do.
We have to eat salad in the spring, but this Caesar Salad with Brown Butter Croutons is so good, I'm not even a little bit mad about it. It's a meal in and of itself.
Everybody's gonna love this Crunchy Lemon Chicken. Serve it with some store-bought sides or easy steamed veggies to make Thursday night stress-free.

We've gotta end the week with something awesome. You can cook the lamb burgers for this Mitraillette outside on the grill. Use frozen chips or fries to make life simple.
What else are we eating?
For breakfast, all I can think about is this Bacon Egg & Cheese Sandwich. This is being made in my kitchen as I write, and I couldn't be more excited about it. It's the absolute best way to use up leftovers.
As soon as I see the first hint of sunshine, I need Passion Fruit Green Tea. It's the best thirst quencher I know.
There's something magical about England in the late spring, and this Bakewell Tart takes me right there. You've gotta give it a try.
