    May Meal Plan | How to Be Awesome on $20 a Day

    I'm bringing you a light and easy week-long May meal plan today. May is usually the warmest month in Glasgow, so we're low on the oven use and light and fresh on ingredients. I'm featuring a couple of meatless dinners, a weekend breakfast, and drink, and a dessert. It's gonna be awesome.

    What's for dinner?

    Creamy Garlic Spinach Dip | How to Be Awesome on $20 a Day

    Mondays are hard, so we're starting the week with something super simple. Mix up some Creamy Garlic Spinach Dip, and round out the night with some other store-bought dips, snacks, or charcuterie. Let everyone graze, relax, and share.

    Chef's Salad | How to Be Awesome on $20 a Day

    This Chef's Salad is easily a full meal for two. No cooking involved, either, so this would be ideal for warm weather.

    Italian Grilled Cheese | How to Be Awesome on $20 a Day

    If you bought some cheese and charcuterie for Monday and still have some leftovers in the fridge, they'd be brilliant in this Italian Grilled Cheese. Serve it with some grilled veggies or soup for a tasty dinner.

    Fiery Halloumi Salad | How to Be Awesome on $20 a Day

    Yes, salad again, but this one is covered in homemade sweet chili sauce and lots of grilled cheese. Fiery Halloumi Salad is awesome. Get some crusty bread and go to town.

    We've made it to the end of another hard week, so we deserve a bowl of carby goodness. If you have fresh sweet corn for this Bacon & Corn Risotto, definitely use that, but frozen or canned is good, too. I think this might be my favorite risotto.

    Cheddar Jalapeno Biscuits | How to Be Awesome on $20 a Day

    Along with some bacon and eggs, make these Cheddar Jalapeno Biscuits. Or just eat them on their own. I mean, you, six biscuits, and a stick of salted butter could be pretty awesome.

    This Cloudy Cider Cup is so refreshing. Load up your cup with fresh fresh fruit and herbs. It's an excellent way to unwind in the sun.

    Jam Tarts | How to Be Awesome on $20 a Day

    Jam Tarts give me that late Spring feeling. Eat them outside on the grass with a cup of tea for bonus points.
