    Mexican Chicken Marinade

    This Mexican Chicken Marinade is packed with spicy flavor. Use your juicy delicious chicken as a main dish, or shred it for tacos, quesadillas, or a variety of other awesome options.

    As long as there weren't any sneaky vegetables crunching between my teeth and ruining my life, I loved Mexican food as a kid. And of course, by this I mean the colonized, commercialized version of Mexican food that 80's moms would make. But somehow the flavors of chilli powder, cumin, and garlic worked for my palate, and I still love them today.

    A simple marinated chicken breast is such an easy way to get dinner on the table any time of year. Pair it with a store bought or super simple side dish and dinner is done. The flavor possibilities are endless so you'll never get bored. Change it up with the season or your mood. Use herbs and spices to call in specific energies. It's so versatile. And it's all healthy and junk. What's not to love!

    What makes this Mexican Chicken Marinade so awesome?

    I love this Mexican Chicken Marinade because it's absolutley packed with flavor. It's more of a paste than a liquid, so the flavor element really adheres to the chicken and gets seared in when you cook it. If cooked mine on a grill pan, but if youcook it over live coals, you'll get an added smoky flavor as well, which would be absolutely awesome.

    I love the versatility of this recipe. Use any piece of chicken you like, pre-chop your chicken if you want smaller pieces, or cook up some whole chicken breasts of thighs, then shred the meat for use in other dishes. This would be great for tacos, quesadillas, or nachos, but you could also add it to soup, chilli, burritos, or salads. I could go on and on. It's so delicious, you'll want to use it everywhere.

    Magical Properties of Cumin

    Cumin carries fire energy and is tied to Saturn, the planet of boundaries and barriers. Use it to call in loyalty and in spells for protection and warding. To me, this spice if very earthy, so I would use it for deeply grounding motivation. How does cumin make you feel? That's every bit as important as the tradtional correspondences.

    Ingredients for Mexican Chicken Marinade

    Ingredients

    Here's everything you'll need to make this marinade. The full details are in the recipe card below.

    • Olive oil - or whatever oil you have on hand for cooking
    • Garlic - chopped fresh garlic or garlic paste would both work
    • Lime juice - I use bottled juice for this, but if you want to use fresh, you might as well add the lime zest as well
    • Herbs & spices - you'll need chilli powder, smoked paprika, dried oregano, cumin, and cinnamon
    • Salt
    • Chicken - use whatever pieces of chicken you like

    Tips for making Mexican Chicken Marinade

    This is quite a thick marinade. It will be more of a paste than a liquid which means it will beautifully adhere to the chicken. All you need to do is mix everything together, then immerse your chicken in it. You can do this in a bowl or a bag.

    Stash your chicken in the fridge for anywhere from 15 minutes to 24 hours. The flavor will deepen the longer the chicken marinates, but it will still be delicious if you forget to do it well in advance. Cook your chicken however you like, but I think grilled, whether indoors or out, is best. You can also shred or chop the cooked chicken to use as an ingredient in a variety of Mexican-inspired dishes.

    Ingredients

    Scale
    • 2 tablespoons olive oil
    • 2 teaspoons garlic paste or 2 cloves garlic, chopped
    • 1 tablespoon lime juice
    • 2 teaspoons chilli powder
    • 1 teaspoon smoked paprika
    • 1 teaspoon dried oregano
    • 1 teaspoon ground cumin
    • ¼ teaspoon ground cinnamon
    • 1 teaspoon salt
    • 1 pound (500 grams) uncooked chicken pieces

    Instructions

    1. Add all ingredients except for the chicken to a medium bowl and whisk to combine into a pasty mixture.
    2. Add your chicken pieces to the marinade, and turn them over a few times to coat them in the mixture. Cover the dish and store in the fridge until you're ready to cook. If you're marinating your chicken for several hours, you can turn it over in the mixture to keep it will coated, but it's not necessary.
    3. Cook your chicken fully in your favorite way. Discard any unused marinade.

    Notes

    You can also use a rubber spatula to transfer your marinade to a zip top bag to marinate your chicken if you prefer.
