This Mint Chocolate Chip Brownie Ice Cream Cake is a simple, semi-homemade collection of deeply delicious things. With a fudgy brownie base, cream ice cream, and glossy chocolate sauce, it's absolutely awesome.
Isn't it interesting how things that look perfect on the outside are often disappointing? Pretty people sometimes harbor ugly hearts. Good intentions can sometimes lead to destruction. And on a much less serious note, those perfect looking cakes and pastries you see in the windows of bakeries or pastries cases at the market often don't live up to the hype once you actually get them in your mouth. They're all style and no substance.
When I was a kid, I always wished for a Dairy Queen ice cream cake because I thought they looked so nice. My birthday is in December, so I never got one. When I was finally old enough to buy my own ice cream cake, I learned that they were certainly fine, but definitely not as nice as they looked. These days, I'd much rather have an ugly pile of deliciousness than a beautiful construction of mediocrity. Sure you eat with your eyes first, but presentation doesn't have any flavor. You always have to go deeper.
What makes this Mint Chocolate Chip Brownie Ice Cream Cake so awesome?
This ice cream cake is definitely homey and inelegant. It's no supermodel, but it is ridiculously delicious. Semi-homemade from delicious store bought ingredients, you'll really have a hard time cutting a reasonable slice because you'll never want to stop eating this. Make this for a summer birthday party, a warm weather Litha gathering, or just because you want something delicious for a hot day.
It starts with a fudgy brownie base which is a million times better than actual cake. On top of that, I've spread a layer of good quality mint chocolate chip ice cream. You can certainly use the cheap stuff and it will still be good, but if you spring for the good stuff, it will be extra awesome. Then I spread a thick layer of hot fudge sauce over the whole thing and dumped a bunch of sprinkles on for color and crunch. So simple. So delicious.

Mint is a powerhouse in the metaphysical realm. Any gardener knows that you should only grow mint in a pot because it's so tenacious that it will absolutely take over your garden. That's exactly the kind of "can't hold me back" energy we all need sometimes.
