This Mint Chocolate Mousse is rich and indulgent, bursting with summery mint coolness. With only 4 ingredients, it's the perfect make ahead summer dessert.

  • 150 grams mint-infused chocolate, chopped
  • 15 grams unsalted butter
  • 3 eggs
  • 1 tablespoon sugar


  1. In a large mixing bowl, add your chopped chocolate and butter. Melt the chocolate, stirring frequently, either suspended over a pan of simmering water or in the microwave. Set aside to cool for at least 10 minutes.
  2. After your 10 minutes is up, separate your egg yolks and whites. Put the egg whites in the medium bowl and the yolks in the small bowl (assuming you're working with a set of nesting mixing bowls like me). Use an electric mixer to beat the egg whites to stiff peaks.
  3. Add the sugar to the egg yolks and whisk until the yolks become pale and increase in volume.
  4. Now bring back your melted but cooled chocolate. Add the egg yolk mixture to the chocolate and fold to combine. 
  5. Add the egg whites by gently folding them in with a rubber spatula. Work in three or four batches, and continue to mix gently until fully incorporated. 
  6. Divide your mousse into four pots or ramekins, then cover and refrigerate for at least 4 hours. Overnight is fine.
  7. Serve chilled with a sprig of fresh mint if you have it.
