Mint & Goat Cheese Scrambled Eggs with text

As witches, we're used to hearing "that will never work." We do things that don't make sense to other people all the time. Leaving a jug of water in the moonlight to charge. Carrying crystals or wearing symbols for protection. Lighting candles and pulling cards. None of it is logical. On paper, none of it seems like it could actively make your life more awesome. So why do we do it? Because we know it works.

Not everything has to make sense on paper, and that's true in the kitchen as well. Sometimes you just don't know until you try something. Not every flavor experiment is a winner. But sometimes you come across a recipe for a Corsican Omlette in a Nigella Lawson book and you just have to take a chance. Turns out, the domestic goddess was right, and mint does work in eggs.

What makes these Mint & Goat Cheese Scrambled Eggs so awesome?

I don't have the patience to make an omlette, so I've brought you Mint & Goat Cheese Scrambled Eggs, and they are absolutely delicious. We're using fresh mint leaves, finely chopped, and a log of firm goat cheese. We want to cheese to melt and get gooey but without adding too much water to the party. The flavor is unexpected but irresistible.

You could definitely make a big pan of these for a brunch party, but for me, this takes my normal morning scrambled eggs to a whole new level. It only takes an extra five minutes to chop the mint and prepare the cheese. Then it just all comes together quickly and easily. Pair it with some whole wheat toast, and breakfast becomes absolutely awesome.

    Magical Properties of Eggs

Eggs have been used in witchcraft for centuries. As home of new life, the symbolize fertility and protection. Several traditions have used eggs to absorb negative energy from a person, and powdered egg shells are a powerful ward. They're also closely associated with Ostara, where they bring new life to the world. Ruled by water and the Moon, eggs carry a deep feminine energy. They can also be used in spells for beauty, purification, healing, sex, and spirituality.

Tips for making Mint & Goat Cheese Scrambled Eggs

With scrambled eggs the trick is to never stop stirring, so you want to have all your ingredients prepped before anything hits the pan. Add your eggs to a bowl with salt and pepper and whisk them until smooth. You don't want to incorporate air, you just want to combine the whites and the yolks, so don't go crazy. Also finely chop your fresh mint and cut your cheese into chunks.

Once that's all ready to go, add your butter to the pan and let it melt. Then toss in the chopped mint and give it a swirl in the butter. Let it cook for a minute to become bright green and fragrant. Then pour in the eggs and use a rubber spatula to stir the eggs slowly but constantly, scraping them up from the bottom of the pan as they cook. When your eggs are coming together but still runny, add in the cheese and continue to stir until the eggs look nearly set but still wet. Eggs overcook super quickly so by the time you're ready to eat them, the carry over cooking will finish them off perfectly.

Serve your eggs with buttered toast if that makes you happy. It makes me very happy.

    Ingredients

    Scale
    • 3 eggs
    • Salt and pepper, to taste
    • 1 tablespoon butter
    • 1 tablespoon chopped fresh mint
    • approximately 75 grams firm goat cheese

    Instructions

    1. Crack your eggs into a bowl and season with salt and pepper. Whisk to combine yolks and whites. Set aside.
    2. Place a non-stick skillet over medium low heat and melt the butter. Add the chopped mint and swirl it into the butter. Let it cook for about 1 minute until it turns bright green and fragrant.
    3. Pour the eggs into the skillet and stir continuously but slowly with a rubber spatula. You want to scrape the cooked eggs off the bottom of the pan repeatedly.
    4. When the eggs start to firm up a bit, add the cheese and keep stirring until the eggs are cooked through but still look a bit wet.
    5. Transfer to a plate and serve with buttered toast.

    Notes
