I dug into the archives to share some of my fall favorites with you this month, so please excuse to sad photos and trust that everything is totally delicious. It doesn't make it on the blog if it's not absolutely awesome.
What's for dinner?
For meatless Monday, we're making Vegan Sweet Corn & Roasted Bell Pepper Soup. The croutons may seem like a bit much, but trust me, they make this soup absolutely awesome.
In a complete departure from the day before, let's go for one of my favorites, Cowboy Spaghetti. This has bacon, ground beef, beer, hot sauce, and cheddar cheese. It's very satisfying.
For some reason, Pork & Onion Hand Pies and mashed potatoes just sounds really good. Get the kids involved to help you shape the pies and carve a sigil into the top of each one to make it a bit more magical.
Cornbread-Topped Chili Mac is an all-in-one deliciousness extravaganza. Use your favorite canned chili. It'll be fine. Actually, it'll be incredible.
If you haven't joined the meatloaf for Thanksgiving crowd yet, at least make this Cranberry Glazed Turkey Meatloaf for dinner once this month. Serve it with Roasted Sweet Potatoes for a mini Thanksgiving dinner.
What else are we eating?
Use as many store bought elements as you like for these Sausage Egg & Cheese Biscuits with Apple Butter. Breakfast will still be awesome.
After a long cold day at whatever fall sports people do these days, an Orange & Amaretto Cider is just what you need.
Chocolate Croissant Bread Pudding is so incredibly indulgent. It's almost embarrassing how easy it is to make.
