I love eating in the dark half of the year. We've got lots of delicious cozy dinners, plus breakfast, dessert, and drink ideas in this October five day meal plan. It's gonna be awesome.
What's for dinner?
Let's have this Potato & Spinach Curry for meatless Monday because it's quick and easy with hearty potatoes and bright leafy greens. What a way to start off the week.
Keep that healthy and hearty streak going with these Easy Cheesy Stuffed Peppers with turkey and rice. You could prep the filling ahead of time and then stuff and bake your peppers when you're ready to eat.
I saw these Baked Chicken Taquitos and just really wanted them. Serve them with rice and beans to round out the meal.
I'm never not wanting a nice chunky soup, but now I can suggest it without feeling weird. This Chicken Corn Chowder is loaded with potatoes, bacon, and all the good stuff. It's a meal all on its own.
Okay, here's what we're going to do for Friday evening. Whether you have kids or not, you're gonna make some Pepperoni Pizza Rolls Ups and/or some Pillow Dogs. Get out a bag of chips and all your favorite dipping sauces. Then bring it all into the living room and eat while you watch your favorite family movies. It'll be so fun.
