Are you a breakfast person? I love breakfast foods, and going out for breakfast is almost always more fun than going out for dinner for me. But on a regular daily basis, I used to skip breakfast pretty regularly. I was too busy to feed myself, too distracted by accomplishing god knows what to stop and enjoy good food in the morning.
But since I started studying mindfulness, and then witchcraft, I've learned to allow my mornings to be a bit more sacred? Do I cook myself an elaborate breakfast every day? Absolutely not. But I do always try to stop and eat something. And when I can find the energy to make something awesome, I give myself guiltless permission to really enjoy it.
What makes Orange Pancakes so awesome?
These Orange Pancakes are a variation on my favorite buttermilk pancakes with a citrus twist. They've got orange juice mixed into the pancake batter so the pancakes themselves are bright and sunny. But we're also making a simple orange syrup to heighten the citrus factor. I just felt so happy while I was eating this pancakes. Oranges have that affect on people.
These would obviously be awesome for breakfast or brunch and are good enough to just make for the kids on a Saturday morning. But they're also special enough for a brunch party if that's your jam. You could serve some bacon or breakfast sausage alongside or make a citrus inspired fruit salad. If you wanted to go more the dessert route, you could serve these with creamsicle ice cream or a drizzle of chocolate sauce. There are so many awesome possibilities.

Here's everything you'll need to make these pancakes. The full details are in the recipe card below
- Sugar - granulated or caster sugar will both work, golden sugar would also be fine here
- Orange juice - You'll need quite a lot, so don't feel like it needs to be freshly squeezed
- Butter - melted, so no need to set out butter to soften
- Flour - all-purpose or plain
- Leaveners - both baking powder and baking soda, aka bicarbonate of soda
- Salt
- Eggs
- Buttermilk - or kefir
Tips for making Orange Pancakes
For me, pancakes are super simple because I've been making them for years, so I've got my technique down. The one thing I always like to stress is don't over mix. A few lumps in your pancake better will actually give you better results than a batter that's totally smooth. Also, make sure your pan is properly preheated.
For this particular recipe, we're gonna start by making syrup, which in this case is just equal parts sugar and orange juice, plus some butter to make it a bit richer. You'll just heat this over low heat, whisking the butter in as it melts. Then once your butter is melted, let it bubble for about 5 minutes to thicken a bit. Then you can just let it cool at the back of the stove while you make your pancakes.
For the batter, you'll mix together your dry ingredients and wet ingredients separately before combining them. Once you've brought the wet and dry together, you want to fold and stir gently until you've got an incorporated but slightly lumpy mixture. Let your batter sit while you preheat your pan, then cook your pancakes about 3 minutes per side until light and fluffy and golden brown.
Top with a generous amount of your orange syrup and enjoy while hot. You can reheat any leftovers in the microwave, but they'll be most awesome fresh off the griddle.

Ingredients
For the syrup:
- 1 cup sugar
- 1 cup orange juice
- ¼ cup (2 ounces) butter
For the pancakes:
- 270 grams (2 cups) all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 42 grams (3 tablespoons) sugar
- 2 eggs
- 1 cup (240 ml) buttermilk
- 1 cup (240 ml) orange juice
- 4 tablespoons (2 ounces) butter, melted and slightly cooled
Instructions
For the syrup:
- Add your sugar, orange juice, and butter to a small saucepan and heat over low heat, whisking frequently to dissolve sugar and incorporate butter as it melts.
- Once the butter is melted, bring the mixture to a boil, then turn the heat back down and let it bubble for about five minutes to thicken. Turn the heat off and set aside until your pancakes are ready.
- Store leftovers in an airtight container in the fridge.
For the pancakes:
- In a medium mixing bowl, combine flour, baking powder, baking soda, salt, and sugar. Mix the dry ingredients well with a whisk.
- In a small bowl, combine eggs, buttermilk, orange juice, and melted butter. Whisk to combine.
- Pour your wet ingredients onto the dry ingredients and quickly and gently mix them together with a rubber spatula. You should use a fold/stir hybrid method. Don't worry about getting out every little lump. Try not to stir for more than 20 seconds. This is the key to tender pancakes.
- Now walk away for five minutes to let the batter rest while you preheat your pan.
- Preheat your griddle to 350 or place of a non-stick skillet over medium heat. You definitely want to have your pan preheated before you add the batter.
- Add a small pat of butter to your pan or griddle. Use a paper towel to spread it evenly across your cooking surface.
- Now start cooking your pancakes. I use a third cup measure to drop my pancake batter into the pan, creating a medium-sized pancake.
- Cook about two minutes a side, turning when you see the bubbles start to subside and the edges start to change color.
- Keep pancakes warm by covering your stack with a clean dish towel.
- Serve hot with plenty of orange syrup and your favorite toppings.
