    Pancake on a Stick

    Have you ever tried a Pancake on a Stick? It's juicy sausage wrapped in a fluffy pancake and dipped in maple syrup. It's absolutely freakin' awesome.

    A witch loves a wand, but I think most humans love food on a stick. There's something about the portable nature of a corndog, a popsicle, or even a big rainbow lollipop that just seems to make us smile. Maybe it's the mobile nature of food on a stick, giving us that sense of freedom to eat as we roam. Maybe it's an American thing, a throw back to fair food that makes us feel reminiscent. Or maybe it's just the awkward way it has to be eaten that humbles us all a little bit.

    I'm not a culinary anthropologist (wouldn't that be a cool job, though?) so I don't know what the origin is, but I'm into it. Whether it's simple grilled chicken on a skewer or the sheer perfection that is a Magnum ice cream bar, I think more food should be on sticks so we can wave them around, walk down the street eating them, or dip them in something delicious. Let the revolution begin.

    What makes a Pancake on a Stick so awesome?

    A Pancake on a Stick is like a sweet and savoury version of a breakfast corndog, and I absolutely love it. Use your favorite breakfast sausage links or chipolatas, dip them in thick, sweet pancake batter, and shallow fry them until puffy, golden, and crisp on the outside. I especially love the little crispy bits that form at the base for extra texture.

    Dip these in maple syrup for extra awesomeness. In fact, if you're making this for grown ups, try stirring a bit of tobasco in with your syrup for an added layer of flavor. I think these would be awesome for the morning of a slumber party if you have kids. If you don't have kids, who cares? You'll still love these, so make them for yourself. I know my dad would put some beer in the pancake batter.

With seemingly endless fields of golden stalks waving in the sun at harvest time, it puts you in mind of endless abundance.     Ingredients

    Here's everything you'll need to make this dish. The full details are in the recipe card below.

    • Breakfast sausages - They need to be pre-cooked, so either buy them that way or cook them ahead. If you're outside the US, I recommend chipolatas or anything more on the skinny side.
    • Neutral oil - for frying
    • Flour - all-purpose or plain
    • Sugar - You could also use vanilla sugar here.
    • Baking soda - aka bicarbonate of soda
    • Baking powder
    • Egg
    • Vanilla extract
    • Buttermilk - or kefir
    • Maple syrup - for dipping

    You'll also need skewers or sticks, obviously. I used skewers meant for grilling meat and cut them into thirds, making them the perfect length for this operation.

    Tips for making Pancake on a Stick

    As I mentioned early, make sure your sausages are pre-cooked. If you don't buy them cooked, you could even cook them the day before and stash them in the fridge for easier breakfast making.

    I don't have a pot big enough for deep frying my pancakes on a stick, so I shallow fried mine in a cast iron skillet. You'll need to add about an inch of neutral flavored oil, such as sunflower oil, and preheat it to about 350 F (175 C). If you have a deep-fryer, you could obviously use that instead.

    Mix up your pancake batter in the usual way. Combine the dry ingredients and wet ingredients separately, then fold them together gently to combine. You'll then want to transfer your pancake batter to a tall glass or similar vesse. This will make coating your sausages much easier.

    Push your skewer about a third of the way into your sausage, pat it dry if needed, then dip it into the pancake batter to coat completely before gently placing it in the hot oil. It will only need to cook a minute or two on each side before being removed to a wire rack over a baking sheet to crisp up. Use tongs once the sticks go into the oil.

    Then all that's left to do is serve this up to your hungry, happy friends and family with pots of maple syrup for dipping.

    Ingredients

    Scale
    • 12 breakfast sausage links or chipolatas, cooked
    • Oil for frying - enough for a 1-inch layer in your skillet
    • 1 cup flour
    • 2 tablespoons sugar
    • ½ teaspoon fine sea salt
    • ½ teaspon baking soda (bicarbonate of soda)
    • 1 ½ teaspoon baking powder
    • 1 egg
    • 1 teaspoon vanilla extract
    • 2 tablespoons neutral oil
    • ⅔ cup buttermilk
    • 12 sticks of skewers
    • Maple syrup, optional, for serving

    Instructions

    1. Add your oil to a skillet and heat to about 350 F (175 C). Pat your sausages dry with a paper towel if needed.
    2. In a mixing bowl, whisk together flour, sugar, salt, baking soda, and baking powder to combine.
    3. In a separate bowl or measuring jug, whisk together egg, vanilla extract, oil, and buttermilk until fully combined.
    4. Pour the wet ingredients over the dry ingredients and mix gently with a rubber spatula until combined. A few lumps are fine. Transfer your pancake batter to a tall glass for easier dipping.
    5. When your oil is fully heated, insert a stick into each sausage about a third of the way up. Dip the sausage into the pancake batter to fully coat, then gently place it into the hot oil. Cook for 1-2 minutes until golden brown, then turn them over and repeat on the other side. Do not overcrowd your pan. I was able to cook 3 at a time. And remember to keep an eye on your oil temperature.
    6. Place your cooked pancake on a stick on a wire rack over a baking sheet to drain off excess oil and let them crisp up.
    7. Serve hot with maple syrup for dipping.
