As much as I can be a total hermit, I sometimes miss the days when friends or family would just pop by without much warning. It wasn't a big deal, not a formal dinner party or anything like that. They'd just show up, and I'd feed them because it's so much easier to cook for three or four than for two. My favorite thing was when I could surprise them with a sweet treat.

There are people who will tell you that kitchen witchcraft needs to be complicated, that everything needs to be homemade, purified, and consecrated. But I think all you need is the intetnion to make someone smile. Don't let "the rules" get in the way of you raising your vibration and the vibration of the people you serve.

These lovely little passion fruit tartlets are a simple and sweet treat that's perfect for summer. With a gingersnap crumb crust, a sweet cream cheese filling, and a generous swirl of passion fruit coulis or curd, we're working with a lovely combination of flavors and textures. The passion fruit really pops with its almost astringent tartness, and the cream cheese is cool and creamy. The crunchy crust provides just the tiniest hint of heat for a little something extra.
This recipe fills 6 mini tart pans, so it's great for a for a summer dinner party. And as a no-bake recipe, it has to be made ahead. So if you are planning a party, you know one course is completely done and out of the way the day before. And with those pretty swirls, people will be totally impressed. They'll have no idea how easy it all was, and you don't have to tell them if you don't want to.

- Gingersnaps - or ginger nuts or whatever they're called in your country
- Butter - melted
- Cream cheese - softened
- Sweetned condensed milk
- Passion fruit coulis - or passion fruit curd or other passion fruit sauce
Tips for making Passion Fruit Tartlets
There are a few steps to making these No-Bake Passion Fruit Tartlets, but none of them are complicated. Start with the crust. Add about 7 gingersnaps to a food processor and blitz them into fine crumbs. Add your melted butter and mix until you have a loose sandy consistency. Divide the crumb mixture between your 6 mini tart pans and press them into the bottom to form a crust. Store these in the fridge while you make the filling.
Add your softened cream cheese and sweetened condensed milk to a mixing bowl and beat them together until smooth. I like to use an electric mixer for this, but you could do it by hand. Then pour this mixture into your tart pans.
The last step is to swirl in your passion fruit coulis. I used a store bought version I found in the dessert section of my local supermarket. You could also make your own passion fruit curd or use store bought if you can get it . Totally up to you. If you are using curd, you'll want to warm it up so that it's easiesr to swirl in. You want a thick but pourable consistency. Just add a tablespoon of your passion fruit topping to each tart and use a toothpick or something similar to swirl it in.
Stash these in the fridge for at least 8 hours or preferably overnight before popping them out of their collars and serving to your excited guests.

Ingredients
- 7 ginger biscuits
- 2 tablespoons butter, melted
- 8 ounces cream cheese, softned
- ¾ cup sweetened condensed milk
- 6 tablespoons passion fruit coulis
Instructions
- Add your ginger biscuits to a food processor and blitz them into fine crumbs. Pour in the melted butter and process for a few seconds until the butter is combined. It will look like wet sand.
- Divide your crumb mixture between 6 mini tart pans. Press the crumbs into the bottom to form a crust, then store in the fridge.
- To make the filling, add your cream cheese and sweetened condensed milk to a mixing bowl and beat to combine. When smooth, divide this mixture between your mini tart pans.
- Spoon 1 tablespoon of passion fruit coulis onto each tartlet, and use a toothpick, knife, or similar to make gentle swirls.
- Put your tartlets into the fridge to chill for at least 8 hours, preferably overnight. Remove from collars to serve.
