    Peas with Pancetta & Cream

    Peas with Pancetta & Cream will bring a bit of an Italian flare to your holiday table. Elevate the humble frozen pea with pancetta, thyme, parmesan, and cream. It's a bit extra, but you deserve it.

    As a picky eater, I sometimes have to remind myself to make vegetables. At the holidays when the sides are the star, I let my husband choose. He loves peas. Must be because he's English. Unless you're growing peas in your own garden and eating them fresh from the pod, frozen peas are really the way to go.

    But at Christmas, you hardly feel like you can just open a bag of frozen peas and dump them in a pot of boiling water. I mean, absolutely no judgement if that's what you do, but I always feel like I need to take it a step further. Somehow my mind equates making a dish more complicated with showing how much I care. So fancy ass vegetables are my way of saying I love you.

    What makes Peas with Pancetta & Cream so awesome?

    These fancy ass vegetables start with rendering cubes of pancetta, go with smoked if you can get it. You could also sub bacon if you can't find pancetta. Anything that starts with cured pork is gonna be awesome. We're also adding dried thyme to our bright and sweet peas for a bit of added earthiness. But what really makes this dish rich and holiday worthy is the cream.

    Boiling peas in heavy cream feels so luxurious and indulgent. You maybe wouldn't eat this on a random Tuesday night, but when you're defying the darkness with pure revelry, a bit of indulgent luxury is exactly what you need. Go ahead and put a big spoonful next to your turkey. You're gonna love it.
