Sometimes elaborate and complicated is exactly what I'm looking for. I want a challenge. I want the sense of accomplishment that comes from doing something hard. The effort is part of the magic. When I have space for things like this in my life, they can definitely make me feel awesome.
But on a busy afternoon when I'm up to my eyeballs in work, I seek the perfect balance of ease and pleasure, especially when it comes to food. I want maximum deliciousness for minimum effort. So often, things that are quick are not actually tasty. Sure, they're convenient, but what's the point of pausing to eat if I don't actually enjoy it. There is a way to bring both of these together, and it usually starts with toast.
What makes Pizza Toast so awesome?
I feel like this hardly needs any explination. What could be more awesome than your favorite pizza toppings on crunchy toast, ready to eat in about five minutes. It's crunchy and cheesy, and packed with whatever toppings turn you on. For me, that's simply pepperoni, with a sprinkle of oregano and crushed red pepper flakes.
This is so easy to make, your older kids could definitely do this themselves for an after school snack. I love it for an awesome work from home lunch that's much tastier than instant noodles or a can of soup. You can also keep it fresh by changing up the toppings based on what's lying around in your fridge. As long as you have sauce and cheese, the rest is up to your imagination.

- Thick bread - Use your favorite type, but make sure it's sliced thick. Texas toast or toastie bread is good.
- Pizza sauce - Your favorite tomato sauce will work. If you're using store bought, tomato based pasta sauces just tend to be a bit more watery than those sold as pizza sauce, so your bread might get a bit more soggy.
- Shredded mozzarella cheese - or any cheese in your fridge that you think would be awesome.
- Your favorite pizza toppings - I like pepperoni and a pinch of oregano and crushed red pepper flakes. Use what you have and what you like. Anything goes.
Tips for making Pizza Toast
Of course, the beauty of this is its simplicity. When you start to get hungry, turn the oven on. Then toast your bread in the toaster to get it as crunchy as you like. Spread a thin layer of sauce onto each slice of toast, then add your toppings and cheese. Pop the toast onto a baking sheet and put it in the oven to melt the cheese. Done!
You could definitely make this in a toaster oven. I don't own an air fryer, but if yours can fit slices of toast, you could use that as well. You just need a hot box to put the toast in to melt the cheese and heat the toppings.
Delicious food for very little effort is definitely a form of witchcraft. Try this Pizza Toast and you'll believe in magic. It's that awesome.

Ingredients
- 2 slices thick cut bread
- 2-4 tablespoons pizza sauce
- ¼ cup shredded mozzarella cheese
- Your favorite pizza toppings
Instructions
- Preheat your oven to 400F (200C).
- Toast your bread to your perfect level of crunchiness.
- Place your toast on a baking sheet. Spread the pizza sauce over the bread. Evenly disperse your toppings and cheese over the two slices of bread.
- Put your pizzas in the oven for about five minutes or until the cheese is melty.
- Let your pizza toast cool for a few minutes before slicing and eating.
