Tips for making Pumpkin Butter
This is a simple dump, stir, and simmer situation. The key is to be patient and let it cook down slowly until it's thick and intensely flavored. Add all your ingredeints to a saucepan and bring it to a bubble, then lower the heat and let it simmer away, stirring frequenty. Use your ears to guide you. You want to hear frequent bubbles, but it shouldn't be rapidly boiling. Adjust the heat as necessary.
Let it simmer for up to 20 minutes. Don't put a lid on. You want the steam to escape to thicken your mixture. Once it's nice and thick, remove it from the heat and give it a taste. Let it cool completely before transfering to clean glass jars and storing it in the fridge. This pumpkin butter will keep for a couple of weeks.
I can't wait for you to try this Pumpkin Butter. You're going to be spreading it on everything you can get your hands on.
