These Roasted New Potatoes with Dill are so simple, yet so elegant. All the flavors shine through in this deeply satisfying side dish that's perfect for Spring.
Occasionally more is more and maximalism is awesome, but I find, more often than not, that simplicity is beautiful. Sure, it's fun to go to a restaurant with a 10 page menu, but it can't beat the unparalleled quality of a tiny hole in the wall place that just does one or two things, but it does them better than anyone else.
In witchcraft, an elaborate ritual can be beautiful, but a single candle lit with burning desire can be just as powerful. In the kitchen, we sometimes thing a long ingredients list makes a better recipe, but when you have fresh food, grown with care, sometimes you just need to let them sing solo. Or in this case, make it a duet.
What makes these Roasted New Potatoes with Dill so awesome?
With these Roasted New Potatoes with Dill, we're really letting the flavor of the potatoes shine through. We're working with tender new potatoes, aka baby potatoes here. So often we cover up the flavor of potatoes with cheese and sour cream and bacon and all sorts. We think of potatoes as bland. But when they're cooked right, perfectly seasoned, crisp on the outside and creamy on the inside, they are a thing of beauty.
A sprinkling of fresh dill brings the fresh flavors of Spring to the party, imparting that vibrant, grassy aroma. It's the perfect simple accompaniment for a pop of contrast. These potatoes are beautiful along side any roasted or grilled meat or fish. Make a big batch to serve a crowd or a small batch for family dinner. They belong anywhere that simplicity is appreciated.
Magical Properties of Dill
Dill is associated with Beltane and Litha, and it certainly makes me think of warm, sunny days. It's ruled by Mercury and the elements of fire and air. So it makes sense that it's used in spells for cleansing a sacred space or clearing the mind. It's also got protective qualities, including protection from witchcraft. It always makes me giggle when I see that people were using witchcraft to protect them from said witchcraft. The human mind is strange. (Source: The Hearth Witch's Compendium by Anna Franklin)

Tips for making Roasted New Potatoes with Dill
This dish is as simple to make as its ingredient list suggests. Cut your potatoes into bite-size pieces. Some will be halved, others quartered, depending on the size your starting with. Don't stress yourself out. Just try to make all the pieces roughtly the same size. Drizzle them with olive oil and sprinkle with salt and pepper. Give them a toss so everything is evenly coated, then roast your potatoes in the oven until they're cooked through.
Once they're out of the oven, sprinkle over some chopped fresh dill, and taste for seasoning. This is when I like to add another pinch of flaky sea salt. Give it all a toss and bring your potatoes to the table with pride in their simplicity.
I hope you trust in the flavors of nature and make this super simple side dish this Spring. These Roasted new Potatoes with Dill are definitely awesome.
