As a kitchen witch, I experience a lot of brown. From beige to deep chocolate brown, it's certainly a color with a bit of nuance, but it's not super inspiring. Yes, it may give you a sense of comfort and grounding, but it's also kind of boring. In fact, beife is actually synonymous with dull. So when I get to work with bright colors in my food, it always gives me a boost of energy.

This Sausage & Sweet Potato Tray Bake is one of the most colorful recipes I've made in a while. What I love about this is that everything just gets chopped up, chucked in a pan, and roasted in the oven all at once. It's such an easy, effortless recipe. But with all that ease, there's still a complexity of flavor, and certainly plenty of beautiful color.
We're working with red onion, whatever color of bell pepper you can get your hands on or love the most, and bright orange sweet potatoes. You can skip the pop of green from the fresh parsley, but I think it really takes the whole thing up a notch. Of course, the star of the show is the bacon-wrapped sausages. Use your favorite sausage here, naturally.

Ingredients
Here's everything you'll need to make this recipe. All the details are in the recipe card below.
- Honey
- Mustard - your favorite variety, in the UK, I use yellow American mustard, in the US, I'd use Dijon
- Sausages - 6-8 of your favorite pork sausages
- Bacon - streaky bacon if you're in the UK
- Bell pepper - 2 in your favorite colors
- Onion - red is ideal
- Sweet potatoes - you could also use frozen, pre-chopped sweet potatoes
- Olive oil
- Salt and pepper
- Fresh parsley - optional but awesome
Tips for making this Sausage & Sweet Potato Tray Bake
This is almost too simple. You're gonna make some honey mustard by whisking together, you guessed it, honey and mustard. Then you're going to wrap your sausages in bacon (I'm not messing around). Then chop all your veggies roughly and scatter them in your baking dish. Give all of this a drizzle of olive oil and a sprinkle of salt and pepper and give it a toss with your hands. Nestle your sausages sausages in amongst your veggies, then drizzle the honey mustard over the whole thing.
Then all that's left to do is pop it in the oven while you get on with your life for half an hour. How easy is that? If you really wanted to plan ahead, you could prep everything in the morning or chop all your veg when you're doing your meal prep at the start of the week. Please know that I am never that organized, and it's easy enough that you don't need to be. As long as you have all the ingredients, this dish is a beautiful breeze.
If you have veggie sausages you really love, you could just leave out the bacon (or swap that for a plant-based alternative) and use those instead. Just check the cooking time to make sure they're cooked properly.

Ingredients
- 2 tablespoons honey
- ¼ cup mustard
- 2 bell peppers (your favorite colors), sliced
- 1 red onion, chopped
- 2 sweet potatoes, peeled and chopped
- 2 tablespoons olive oil
- Salt and pepper, to taste
- 6-8 pork sausages (depending on the quantity they're sold in)
- 3-4 slices streaky bacon
- Fresh parsley, chopped, to garnish, optional
Instructions
- Preheat your oven to 400 F (200 C).
- In a small bowl, whisk together honey and mustard. Set aside.
- Add your chopped bell peppers, onion, and sweet potatoes to a roasting pan. Drizzle with olive oil and sprinkle with salt and pepper. Toss them together with your hands to coat them in the oil.
- Cut your bacon slices in half and wrap a half a slice around each of your sausages. Arrange them in your roasting pan on top of the veggies. Drizzle over the honey mustard.
- Cook this in the oven for 30-35 minutes until your sausages are cooked through and the veggies are tender. Sprinkle over the fresh parsley before serving.
