I've got a sweet and simple throwback cocktail for you known as Sex on the Beach. Peach schnapps and pineapple juice are mixed with vodka and lemon-lime soda for a drink that's a little bit naughty. Fix one for you and a date and see what happens.
I think I may be living in the only city in the UK where we're still not allowed to leave town. Glasgow is the only part of Scotland still in level 3 Covid restrictions which means we can't travel outside the city. Luckily, we didn't get overly zealous and book any trips, even within the UK. I guess I'm just going to have to find a park somewhere in the city that I haven't been to yet. There's no telling when they'll finally let us out.
And we're still not allowed to drink indoors at a pub. I think some people may find this the most offensive restriction of all. Pub culture is a way of life here, and the weather has been completely awful. Not that it's stopped most people from getting their pint. I live in a country of very dedicated drinkers. But I don't think I'll be sipping a cocktail in a bar anywhere in the world any time soon.
What makes this cocktail so awesome?
Luckily, this food blog has left me well-equipped to mix up a fruity cocktail on my own. Today I'm sharing an awesomely bad 80's cocktail, Sex on the Beach. The name may make you want to giggle or roll your eyes, but it's sweet and sippable. Call it what you want. I'll have another.
This version is a simple mix of peach schnapps, vodka, pineapple juice, and lemon-lime soda, specifically Sprite. I also added the tiniest bit of grenadine to create a layered effect. You could also use cranberry juice. You'll obviously want to stir this before drinking. Whether you drink it at an actual beach or in your living room is entirely up to you.
How to make a Sex on the Beach
There is no fancy mixology going on here. Simply add some pineapple juice, peach schnapps and vodka to a cocktail shaker or a jar with some ice, and shake it all together. Strain this into a glass with more ice, then top up your glass with lemon-lime soda. I drizzled in just a bit of grenadine to create the layered look. That's totally optional, as is the garnish. I used pineapple and Maraschino cherries. I guess tying a cherry stem with your tongue probably tracks with the general theme of the drink.

Anyone who's seen the stage version of Cabaret knows that pineapples are a symbol of hospitality and welcoming. They are also associated with wealth and good luck. Pineapple is associated with sun and fire, so use it to call in courage and confidence. (Source: Elune Blue)

Ingredients
- 2 ounces pineapple juice
- 1 ounce vodka
- 1 ounce peach schnapps
- 1 can lemon-lime soda
- ¼ teaspoon grenadine, optional
- Ice
Instructions
- Add the pineapple juice, vodka, and peach schnapps to a cocktail shaker with ice. Give it a good shake, then strain this into a glass with fresh ice.
- Top up with your lemon lime soda. To create a layered effect, don't stir it. If you want to make the layers a little more dramatic, drizzle in a smidge of grenadine and let it settle to the bottom.
- Stir before drinking.
