These Southwest Chicken Burritos are loaded up with black beans, spinach, bell peppers, and corn, plus all the delicious Southwest spices and a dollop of chipotle sour cream. They're absolutely irresistible.
It's no secret that I can be sort of a basic witch sometimes, especially when it comes to food. I have closed taste in Human Design, so I like what I like, and there's no convincing me otherwise. And I am not strong enough to avoid the spell of chain restaurants like Chili's. Southwest Egg Rolls appear in my dreams, and I can't resist.
Living in Scotland, the closes Chili's to me is in Germany at an American air base, so it's pretty hard to get my fix. We did visit one while we were in Marrakesh because that stuff is addictive and we couldn't resist since we hadn't been there since 2018. Part of being a witch is owning who you are, and this is who I am.
What makes these Southwest Chicken Burritos so awesome?
I'm not going to all the trouble to make deep fried egg rolls at home, but I can make the filling for my favorite chili's appetizer and wrap it all up in a big, soft tortilla, and it's almost as good, which is still extremely delicious. This recipe has tender chicken, black beans, bell peppers, spinach, and corn all simmered together with spices like chili powder and cumin. I also mixed up a chipotle sour cream and added in plenty of shredded smoked cheddar. It was deeply satisfying.
And of course, you don't have to go the burrito route. You could pile this into a crunchy taco shell, use it as a nacho topping, or fill a quesadilla with it. The point is, no matter the vehicle for delivery to your face, you're never gonna want to stop eating this.

- Cooked chicken - This can be leftover, cooked ahead from frozen, rotisserie chicken, whatever is easiest for you.
- Olive oil - or whatever you keep on hand to cook with
- Black beans - canned
- Bell pepper
- Jalapenos - pickled jalapenos add a pop of acid, but fresh is also fine
- Corn - frozen is easiest
- Flour tortillas
- Spinach - frozen and thawed with the water squeezed out
- Taco seasoning - use your favorite packet or make your own
- Cheese - I like smoked cheddar, but Monterey Jack would also be good
- Green onions
- Sour cream
- Chipotle paste
Tips for making Southwest Chicken Burritos
This is the kind of recipe where you can just sort of dump things into a skillet without too much concern for measurements. Add as much of each thing as looks good to you. The amounts in the recipe card below will be a guide. Basically, all you have to do is cook the chicken, beans, veggies, and spices together until the vegetables have softened some and the flavors have had time to mingle.
Then scoop your filling generously into a soft tortilla, top with plenty of cheese and chipotle sour cream, wrap and eat. Store leftover filling in the fridge in an air tight container for a couple of days if you like. It probably won't last that long.
If you wanted to take this right over the top, you could heat some oil in a skillet and lightly fry the outside of your burritos for a bit of extra crunch.

Ingredients
- 1 tablespoon olive oil
- ½ red bell pepper, chopped
- ¼ cup pickled jalapenos, chopped
- ¼ cup frozen spinach, thawed and drained
- 1 14 ounce can black beans, drained and rinsed
- 8 ounces cooked chicken
- ½ cup frozen corn
- 2 green onions, thinly sliced
- 1 packet taco seasoning
- ¼ cup water
- 4 flour tortillas
- ½ cup shredded smoked cheddar
- ¼ cup sour cream
- 1 tablespoon chipotle paste
Instructions
- Place a skillet over medium heat and warm the oil. Add the bell peppers and sautee for a few minutes to soften, then add the jalapenos and spinach and cook for a few more minutes.
- Add the black beans, chicken, corn, and green onions, then sprinkle over the taco seasoning, pour in the water, and stir to combine. Let this all simmer together for 5-10 minutes.
- While the filling is cooking, stir your sour cream and chipotle paste together in a small bowl.
- To assemble your burritos, scoop about half a cup of your filling down the center of each tortilla, sprinkle on some cheese, spread on a spoonful of sour cream, and wrap it all up inside your tortilla, burrito style.
