Units Scale
  • 1-1/4 cups or 300 ml heavy or double cream
  • 1/4 cup or 2 ounces butter
  • 1/4 cup grated Parmesan cheese plus more for sprinkling
  • 1 teaspoon dried oregano
  • 1 teaspoon red pepper flakes
  • Salt and pepper to taste

Instructions

  1. Add your heavy cream to a wide shallow pan and warm it over medium low heat, stirring occasionally. Add the butter, and whisk to combine as the butter melts. Let this simmer for about five minutes to thicken.
  2. Stir in the cheese, followed by the oregano, red pepper flakes, salt and pepper. Once it's fully combined, taste for seasoning and adjust to your liking.
  3. Serve with 8 ounces of cooked long pasta such as linguine or fettucine. Sprinkle with more grated Parmesan cheese if you like.
