These Spicy Mashed Potato Patties are here to transform leftover mash into crispy little cakes of spicy awesomeness. Mix your mashed potatoes with some beaten egg, a bit of flour, and of course, a dash of chopped jalapenos, then fry them up golden brown to create a nice crispy outside and a creamy middle. It's delish.

Tips for making Spicy Mashed Potato Patties
These are pretty easy, but you do have to use your instincts a bit because you may not have exact measurements of leftover potatoes. You may need a bit more flour to hold everything together, but you don't want your patties to be totally dry. Making these is much like making mud pies as a child. It's very messy, but obviously tastes much better than mud.
Use a small mesh sieve or a tea strainer to dust your patties with a bit of flour before adding them to your hot pan, and let them get good and crusty before flipping them. Work gently. They will soak up some oil, so you may need to add a bit more as you work through all of your potato mixture.
For me, it's gotta be a fried egg. I also like to have some hot sauce and sour cream on top. If you're making these for dinner, they can be a side dish to a nice steak or grilled chicken.

Ingredients
- Approximately 2 cups leftover mashed potatoes
- 1 egg, lightly beaten
- 2 green onions, thinly sliced
- 1 red chili, chopped (remove the seeds if you want to decrease the heat)
- Approximately 2 tablespoons flour for dusting
- 2 tablespoons olive oil
- Sour cream and hot sauce, optional
Instructions
- In a large bowl, stir together the mashed potatoes, egg, green onion, and chili until well combined.
- Put a large skillet over medium heat and add the oil. Allow the pan to heat up while you make the patties.
- Use a large scoop to scoop out the potato mixture. I drop it into my hand to pat it flat then dust the top with flour and carefully place the flour side down into the hot pan. Then sprinkle the top with a bit more flour and repeat with the remaining potato mixture. You may have to cook your potato patties in batches depending on the size of your pan.
- Cook each potato patty about three to five minutes a side or until it's as brown and crispy on the outside as you'd like. Gently flip your potato cake and cook for another five minutes on the second side. Remove to a plate and top your potato patty with a drizzle of sour cream and hot sauce.
