I saw something on Instagram the other day about being a lazy perfectionist. This blew my mind because I didn't know, until that very moment, that this is me. I can be very meticulous and methodical, but I also don't like doing one more thing than I actually have to. I can sit still for ages, but I need to be taking in information so the time is not wasted. I love being lazy, but feel guilty about it.

This Super Simple Shortbread is the epitome of lazy perfection. With hardly any work at all, you can get a buttery little cookie that tastes absolutely heavenly. You can also tell that I'm a lazy perfectionist because I did not measure my shortbread fingers before cutting them, so they're all slightly different sizes. But I assure you, they tastes just as delightful.
How to make Super Simple Shortbread
To make this shortbread, you simply need to mix together butter and sugar until light and fluffy, then mix in the flour and a pinch of salt. Yes, technically that's a fourth ingredient, but everyone knows salt and water are free. You may have a bit of a shaggy mixture, but not to worry. Transfer it to an 8x8 baking dish, and simply press it evenly into the pan. It will all come together as you press it into the edges. Bake the dough for 20 minutes or until it just starts to go golden.
Let the shortbread cool in the pan, then cut it into fingers. You can dust them with powdered sugar if you like, but they're perfectly delightful as they are. Enjoy a finger or two with a cup of tea or coffee. They're even better if you get to share them with a friend.

½ cup (1 stick) butter, room temp
⅓ cup sugar
1-¼ cup flour
Pinch of salt
Powdered sugar, for dusting
Directions
- Preheat oven to 325 F (160 C).
- With a mixer on medium speed, cream butter and sugar together for about three minutes until light and fluffy.
- Turn mixer down to low and mix in flour and salt until just combined.
- Press dough evenly into an 8x8-inch baking pan.
- Bake for 20 minutes or until lightly browned.
- Cool shortbread in the pan, dust with powdered sugar if you like, cut into whatever shape your heart desires.
