This vegan Sweet Potato Chickpea Dip combines a classic winter ingredient with bright pops of flavor for a uniquely delicious holiday starter or party snack. Get your pita chips ready, it's gonna be awesome.
Every year at Thanksgiving, I get really excited to make the menu. Living in Scotland, people just assume that whatever I choose is right, and I don't bother to tell them otherwise. I'm the head witch in my kitchen, and even if I decide to make something a little untraditional, I know everyone's gonna feel awesome. They just trust me and go along for the ride.
With so many different dietary restrictions for different guests, making a "traditional" holiday dinner can get complicated. But for me, it's important that everyone feel welcome. I know my guests may not remember the details of everything they ate, but they will remember how they felt while they were feasting in my home. I want them to feel loved.
What makes this Sweet Potato Chickpea Dip so awesome?
That's why it's great to have some vegan options available on the menu. This recipe is slightly adapted from Nigella Lawson's book, Simply Nigella. It's a perfect balance of sweet, salty, and acidic. The flavor goes deep with ginger and lime along with roasted garlic and smoked paprika. And those jewel-bright pomegranate seeds look absolutely gorgeous and give each bite a literal pop of sweetness.
Serve this with tortilla or pita chips, raw veggies, or breadsticks. You can put it out for pre-dinner nibbles, add it to a party spread, or gather around the table with friends for a picky dinner. I like to imagine having this spread as part of a table full of little DIY dishes that you can eat slowly with plenty of wine, maybe before a movie or game night with friends.

Sweet potatoes have a long history among the Papuan culture in Indonesia, but they've also taken on magical significance in the West. As a root vegetable with bright orange flesh, they're often tied to both the root and sacral chakra. Work with sweet potatoes when you want to feel grounded or more creative.
