    Sweet Potato Nachos

    Sweet Potato Nachos are crunchy, cheesy, flavorful, and maybe even a little bit healthy. Most importantly, they're delicious and easy to make for a party or even a fun dinner. It's gonna be awesome.

    Humans love a quick fix. You see it everywhere, even in witchcraft. We're resistant to the slow evolution of lasting change. We want what we want, and we want it right now. So we add a pinch of cinnamon to our spells to speed them up, or we hop on the bandwagon of fads to change our appearance or fix our relationships. Anything to get the results without doing the work.

    Remember super foods? All we had to do was just eat these 12 or so foods and all our problems were solved. Except that nutritional advice is constantly changing, and nobody really seems to know what's healthy and what's not. Turns out all we can really do is pay attention to our unique bodies' needs and do our best every day to take care of ourselves.

    What makes Sweet Potato Nachos so awesome?

    So yes, sweet potatoes and black beans were on that super foods list, but they're here because they're freaking delicious. It's pure bonus that they are also really good for you. I think.

    These Sweet Potato Nachos are freaking awesome. My husband and I both hover over the hot pan with our various dips, shoving these cheese laden chips into our faces as fast as we can. The roasted sweet potatoes add a pop of sweetness, and the black beans bring a deep earthiness. The pickled jalapenos provide both a bit of heat and a punch of acid from their vinegary brine. And did I mention that crunch? Definitely the best part.

    Or maybe the cheese is the best part. Use whatever cheese you have on hand, but if you wanted to mix something spicy with something melty, you wouldn't regret it. I also like to offer up sour cream and salsa. Add in a dish of guacamole if you love it. Nachos are totally customizable, so follow your tastesbuds to pure awesomeness.

    Magical Properties of Sweet Potatoes

    Sweet potatoes certainly do call in sweet energies. They're tied to friendship, harmony, grounding, nurturing, and sensuality. With their association with the root and sacral chakras, their energy is deeply sensual and earthy. They're also corresponded to the planet Venus, so you can call on them for a bit of love magic as well. Use sweet potatoes in your witchcraft when you need a physical experience of care and contendedness.

    Ingredients

    Here's everything you'll need to make this recipe. The full details are in the recipe card below.

    • Tortilla chips - choose chips that are sturdy enough to carry all your toppings.
    • Cheese - cheddar, mozzarella, Monterey jack, or cheese infused with chilies would all be awesome.
    • Sweet potatoes - chopped and roasted, feel free to buy pre-chopped frozen sweet potatoes for this.
    • Black beans - from a can
    • Pickled jalapenos
    • Dips & toppings - sour cream, salsa, guacamole, whatever sounds good to you

    Tips for making Sweet Potato Nachos

    Making nachos is not exactly a complicated scientific process. Spread and scatter to your heart's content. Add as much or as little as you like. You'll need to pre-cook your sweet potatoes, but they're just getting roasted in the oven in big chunks.

    To assemble your nachos, cover a baking sheet in a layer of tortilla chips, then add a ton of cheese, sweet potato chunks, and black beans. You can scatter over another layer of cheese if it feels right to you. Then just pop that in the oven until the cheese is melted.

    From there, you can add your pickled jalapenos as well as any other toppings you might like. I prefer to keep wetter things like sour cream and salsa on the side as a dip. You can certainly dollop them directly onto your nachos, but I find it promotes sogginess, and I'm looking for ultimate crunch.

    You don't need an excuse to make Sweet Potato Nachos. Just make them because they're freaking awesome, and you deserve nothing short of awesomeness in your life.

    Ingredients

    Measurements are all just suggestions. How much you use will depend on your personal preferences.

    • 1 bag (185 grams) tortilla chips
    • 2 cups shredded cheese such as cheddar, Monterey Jack, or cheese with chilies
    • 2 cups chopped sweet potato
    • 1 can black beans, drained and rinsed
    • Toppings such as pickled jalapenos, salsa, and sour cream

    Instructions

    1. Preheat your oven to 425 F (220 C). When your oven is hot, add your chopped sweet potatoes to an oiled baking sheet and roast them for about 20 minutes or until tender. If you're using frozen sweet potato chunks, you can cook them straight from frozen.
    2. When your sweet potatoes are ready, scatter your tortilla chips in and even layer on a baking sheet, then cover them with a layer of cheese. Next, scatter over the sweet potatoes and black beans. Add more cheese if you like.
    3. Put the nachos in the oven for 5-10 minutes until the cheese is melted. Keep an eye on them.
    4. To finish, scatter over pickled jalapenos and any other toppings you desire. Serve hot.
