When it comes to breakfast, I'm often a grab and go kind of gal, but if I have the time to make something hot, I still need it to be quick and easy most of the time. These Tortilla Breakfast Wraps are perfect for that. They're filled with sausage, scrambled eggs, and cheese, plus a good dose of your favorite salsa. They're a bit spicy, totally filling, and completely delicious.
If you cook your sausage and shred your cheese ahead of time, you can make breakfast wraps pretty easily throughout the week. I don't love frozen and reheated eggs, so I scramble my eggs when I'm ready to eat, then layer in the other ingredients, wrap it up, and dig in. So simple.

Tips for making Breakfast Tortilla Wraps
You can really customize this to your heart's content. Use it as a way to clear out your fridge. Prep ingredients ahead of time to make your wrap construction extra easy.
First you'll need to cook your sausage. Here in Scotland, I get Cumberland sausages and remove them from the casing. As you break them up in the hot skillet, mix in some cumin and some red pepper flakes for a more Southwest flavor. You can definitely do this ahead of time and just reheat about a quarter cup of sausage for each wrap in the microwave when you're ready for breakfast.
If you don't buy pre-shredded cheese, make sure you have a stash of shredded cheese on hand as well. Cheddar or pepper jack would be awesome here, but you can use just about anything.
I use store-bought tortillas and salsa. If that's not your jam, obviously, do your thing. But if you're lazy like me, these really need no preparation. You might like to pop your tortilla in the microwave for 20 seconds to soften it up.
Tips for making scrambled eggs
The only thing that takes a bit of attention is making scrambled eggs. I learned from my mom, and the secret is to keep the eggs moving constantly. I believe her exact instructions were stir stir stir stir stir stir stir. Use a spatula to scrape the cooked bits of egg off the bottom of the pan, and turn the heat off before they look fully cooked. Finish them off with the residual heat of the pan. If scrambled eggs look fully cooked before you remove the heat, they will definitely end up overcooked by the time you get them on your plate. I add a splash of water to my eggs, along with salt and pepper before whisking them in the bowl and adding them to a skillet over low heat.
Then just do your best not to overfill your tortilla with all that awesomeness. Get the biggest tortillas possible so you can have as much as you like.

Ingredients
- 2 flour tortillas
- ½ cup pre-cooked sausage
- ¼ cup shredded cheddar cheese
- 3 eggs, scrambled
- ¼ cup salsa
Instructions
- To cook your sausage, simply brown your favorite breakfast sausage in a skillet until fully cooked. If you're using sausage in casing, remove the casing. If you want to add some additional flavors, I suggest a sprinkle of ground cumin and a pinch of red pepper flakes. Break the sausage up into chunks as it cooks. Remove to a paper towel-lined plate to drain off excess grease. Reheat as needed if you've made it ahead of time.
- To scramble your eggs, crack three eggs into a bowl, add a splash of water by taking your bowl to the kitchen sink and turning on the tap for one second. Then add salt and pepper and whisk your eggs together. Add the whisked eggs to a skillet over low heat. Use a spatula to constantly gently stir the eggs until they are mostly set. Turn the heat off while they still look a bit wet. They'll finish cooking as the pan cools.
- To assemble your wrap, lay out your tortillas and spoon your sausage, cheese, eggs, and salsa down the middle. Fold on side over, then fold in at least one end. Then flip the folded long end over the open end to create your wrap.
