I love the act of cooking so much, I will happily make a dish that I have no intention of eating. As a picky eater, or maybe even a super taster, there are some things my brain just won't go for. Unfortunately, pretty much all vegetables fall in that category.
Luckily, my husband will eat pretty much any vegetable quite happily, so I get to experiement on him. I also love that I can create something that brings a smile to his face, even if I'm not enjoying it myself. It's a win win. He gets to eat something awesome, and I get to be of service by doing something that I love.
What makes Vegan Tomato Curry so awesome?
The main ingredient in this recipe is halved cherry tomatoes, which are basically like little flavor bombs. They're balanced out with onion and green peas along with some tasty spices and just a hint of heat. It's totally hearty and filling. You don't need meat at all.In fact, my husband ended up stretching this to three servings.
I think this would be a great summer dinner served with some coconut rice. It's definitely easy enough to make on a weeknight. It does need to simmer for a bit, so it's not exactly quick cooking, but all you have to do is chop a few things and sprinkle over some spices then leave it in the pot to get happy. Serve it with some coconut rice to round things out.
How to make Vegan Tomato Curry
Like many great recipes, this one starts with sauteeing an onion. Once your onions are nice and soft, we'll add some chopped garlic and a whole bunch of halved cherry tomatoes. My store sells 330 gram packages, so I use two. Adjust your amount of tomatoes based on what's available to you. To this, we'll also sprinkle in some turmeric, mustard powder, cayenne, and garam masala. Then just let it bubble away for about 20 minutes. The tomatoes will release some juice to create a sauce.
Then we're gonna add some frozen peas to the pan, and let those cook for about five minutes. Give it all one last stir, taste for seasoning, then serve this beautiful dish on a bed of rice.

Ingredients
- 1 tablespoon rapeseed or olive oil
- 1 onion, peeled and chopped
- ½ teaspoon salt
- 2 cloves garlic, peeled and chopped
- 660 grams cherry tomatoes, halved
- 1 teaspoon turmeric
- ½ teaspoon mustard powder
- ½ teaspoon cayenne
- ½ teaspoon garam masala
- 100 grams frozen peas
Instructions
- Heat you oil over low heat in a large shallow pan with a lid such as a cast iron casserole. Add your chopped onion and a sprinkle of salt, and let this cook for about five minutes or until your onions are softened. Stir occasionally to prevent too much browning.
- Next, stir in the chopped garlic and your halved cherry tomatoes. Sprinkle over the turmeric, mustard powder, cayenne, and garam masala. Stir to combine.
- Put the lid on your pot and let this cook over low heat for about 20 minutes.
- Finally, add your frozen peas, stir them in, and put the lid back on to let them heat through for about five minutes. Taste for seasoning and serve with rice or your favorite side.
