Ingredients
- 3 ounces (6 tablespoons) unsalted butter, room temperature
- ¼ cup brown sugar
- 3 tablespoons caster or granulated sugar
- 1 egg yolk
- 1 teaspoon vanilla
- ½ cup + 2 tablespoons (⅜ cup) all-purpose or plain flour
- ⅛ teaspoon salt
- ¼ teaspoon baking soda
- ¼ teaspoon baking powder
- ⅓ cup white chocolate chips
Instructions
- Preh-heat your oven to 375 F (190 C) and line a baking sheet or two with parchment or a silicone baking mat.
- Add your butter to a large mixing bowl and beat with an electric mixer for until creamy, about 30 seconds.
- Add the brown and white sugar and beat until combined and fluffy.
- Add the egg yolk and vanilla and beat to combine.
- In a separate mixing bowl, add the flour, salt, baking soda, and baking powder and whisk gently to combine. Then add the dry ingredients to the butter mixture and beat on low until just combined.
- Stir in the white chocolate chips with a rubber spatula.
- Scoop your cookie dough onto your baking sheet, leaving plenty of room for them to spread. Bake for 8-10 minutes or until golden around the edges.
- Leave the cookies on the baking sheets to finish cooking for about 5 minutes, then transfer to a wire rack to cool. Store leftovers in an air tight container.
