    Lychee Mimosa

    The end of the year is nearly here, so we need a sparkly drink to say goodbye with. A Lychee Mimosa will help you ring in the new year. It's sweet and tart and would be just as awesome at a Sunday brunch. Let's get into it.

    We're nearly there, kids. 2020 has had more twists and turns than any of us would like. When you think of things that happened back in January, it seems like a hundred years ago. And yet when we consider that we've been mostly staying at home for nine months, it feels like time has stood still. This New Year's Eve is going to be a big exhale for a lot of people. Just please try to do it from the safety of your own home with your own household or small bubble.

    We've learned so much about compassion this year. Or what the lack of compassion can lead to. We've also learned so much about gratitude and the preciousness of life. Hopefully we'll go into 2021 with our eyes and hearts open a little wider. Is it possible to want things to go back to normal and to want things to change in equal measure?

    This year, I made us a Lychee Mimosa to ring in the new year. I don't know why my brain associates lychee with winter when they're actually in season in the summer. The good news is, you can buy them canned, so check the Asian section of the grocery store if they're not with the rest of the canned fruit.

    I used lychee juice to make these mimosas. Just a shot in the bottom of the glass, then top up with your favorite cheap sparkling wine. If you want it a little sweeter, you can add some of the syrup from the can. Or to evoke the red blush of a fresh lychee, add a tiny bit of grenadine to the bottom of the glass before you pop in the lychee fruit. These are sweet and tart and easily sippable.

    How to make a Lychee Mimosa

    Making a mimosa is hardly rocket science. Not that we need anything complicated this year. Add some juice to a glass, then top it up with sparkling wine.

    For this particular iteration, we're using an ounce of lychee juice and garnishing with a whole lychee in the bottom of the glass. Use a cheap but decent sparkling wine here. Don't waste the good stuff on something you're going to jazz up with fruit juice. A quarter teaspoon of grendadine is totally optional. I just like the look of it.

    I love the look of a coupe glass, but a traditional champagne flute will hold the bubbles in better. Do what makes you happy.

    Ingredients

    Units Scale
    • 1 ounce lychee juice, chilled
    • 4-6 ounces sparkling wine, chilled
    • 1 whole lychee, fresh and peeled, or canned
    • ¼ teaspoon grenadine, optional

    Instructions

    1. If you're going for the fancy version, add just a bit of grenadine into your glass, right in the center, then pop in a whole, peeled lychee.
    2. Pour over the lychee juice, then top up your glass with your sparkling wine.
