    I struggle to understand people who don't like chocolate. Like, have they just never had good chocolate? Do they think a chalky Hershey bar is all there is? How can they deny themselves the sensual pleasure of allowing a square of silky smooth chocolate to melt on their tongues? What's wrong with them?

    But then I remember there are tons of foods that I don't like that people are crazy about, so I guess it's allowed. But if you think chocolate is gross or even no big deal, this post probably isn't for you. It's chocolate on chocolate on chocolate in three gorgeous ways. To me, that's definitely awesome.

    What makes these Triple Chocolate Cookies so awesome?

    These Triple Chocolate Cookies are made with a dark chocolate and cocoa powder base for a deeply fudgy cookie that's soft in the center and chewy around the edges. There's a mix of milk chocolate chips and white chocolate chips folded in for a pop of sweetness. You're gonna need to eat three at least. They're much to good to stop at just one cookie.

    These would make an awesome lunch box treat for any age. I mean, can you imagine coming back to your desk after a boring meeting and remembering you have these cookies in your bag? Speaking of boring meetings, if you unveil a tin of these cookies, your meeting suddenly feels much more like a party. Cookies are the perfect transportable treat, and these will satisfy every palate.

    Magical Properties of Chocolate

    All forms of chocolate have magical properties in common such as a connection to the heart chakra and some form of love energy. But each type also has its own subtle distinctions to help you fine tune your spellwork.

    White chocolate, with its subtle sweetness, is tied to the element of water and bring self-love and friendship. It's affects are more subtle, like its flavor.

    Milk chocolate is more earthy and can be used to raise emotional energy. Call on it in spells for nurturing, balance, and fun.

    Dark chocolate is much more intense in flavor and in magical potency. Connected to the element of fire, its energy is much more sensual and passionate. Use it in spells for romance and prosperity.

    Ingredients

    Here's everything you'll need to make these cookies. The full details are in the recipe card below.

    • Dark chocolate - chopped or chips, it's going to be melted so it doesn't really matter
    • Butter - unsalted and softened
    • Brown sugar
    • White sugar - caster or granulated
    • Egg
    • Flour - all-purpose or plain
    • Baking powder
    • Cocoa powder
    • Salt
    • Milk chocolate chips
    • White chocolate chips

    Tips for making Triple Chocolate Cookies

    These cookies have a fudgy dark chocolate base, so you'll need to start by melting some dark chocolate, either in the microwave in 30 second intervals or in a glass bowl suspended over a pan of simmering water. Just stir frequently and be sure to let it cool for at least 10 minutes before you even think of adding it to anything else.

    To make your dough, you'll beat together butter and sugar, then beat in the egg, followed by the melted chocolate. Combine your dry ingredients in another bowl, then beat them into your butter mixture, and finally, fold in your chips. You don't need to chill this dough, but it won't do any harm if you do.

    Scoop them out onto a lined baking sheet, leaving plenty of space for them to spread, and bake until they're set around the edges. Let them cool on the cookie sheet where they'll continue cooking for a few minutes. Then resist the urge to shove them all in your mouth as you transfer them to a wire rack to cool.

    Ingredients

    Scale
    • 50 grams dark chocolate, chips or chopped
    • 100 grams unsalted butter, room temp
    • 75 grams brown sugar
    • 50 grams white sugar
    • 1 egg
    • 140 grams all-purpose or plain flour
    • ½ teaspoon baking powder
    • 20 grams cocoa powder
    • ⅛ teaspoon salt
    • 50 grams white chocolate chips
    • 50 grams milk chocolate chips

    Instructions

    1. Preheat your oven to 175 C (350 F) and line a few baking sheets with parchment paper or a silicone baking mat.
    2. Melt your dark chocolate either in the microwave in 30 second intervals, stirring after each, or in a glass bowl set over a pan of simmering water. Don't let the bowl touch the water. Stir frequently until melted. Set aside to cool for 10 minutes.
    3. In a large mixing bowl, add butter, brown sugar, and white sugar, and beat with an electric mixture until pale and fluffy. Add egg and beat to combine. Add melted chocolate and beat on low speed to combine. Scrape down the sides of the bowl and mix one more time to make sure everything is thoroughly combined.
    4. In a separate bowl, add flour, baking powder, cocoa powder, and salt, Stir to combine. Add dry ingredients to the butter mixture and beat on lowest setting to combine. 
    5. Add milk and white chocolate chips and beat on low or fold in with a rubber spatula.
    6. Scoop your cookies out onto your baking sheet leaving plenty of space in between for them to spread. Bake for 8-10 minutes until they're dark brown and set around the edges. 
    7. Allow the cookies to cool on the pan for about 5 minutes and then transfer to a wire rack to cool completely.
    8. Store in an air tight container.
