Well, the sunshine finally made an appearance, and for once, no one was complaining about having to be outside. We rode a bus an hour each way to see family. It was a little bit weird to only be able to go in the house to wash my hands or use the bathroom. And even though I had a minor meltdown prior to leaving, it was ultimately lovely to enjoy the company of other humans in a purely social setting.
I had become so accustomed to just being able to stay in my house working on my (about to flourish at any moment) business, I forgot what it was like to have to make time for other people. Gone are the days when you can just stay in your flat for five days in a row taking pictures of your food and barely looking up from your laptop. We have to connect again. I guess I wasn't quite prepared.
What makes Whipped Feta on Toast so awesome?
If you're hosting an outdoor spread, I think this Whipped Feta on Toast would be beautiful to start things off. The whipped feta is super easy to make ahead. The flavor is creamy and bright with a good bit of acidity from the lemon zest and yogurt. Toast is just toast. I'd be perfectly happy to stop there, but of course, there are endless possibilities with this one. You could go sweet or savoury, and it would all be delightful.
For the versions you see here, I went for a base of sourdough rye. One topping combo is just halved cherry tomatoes and fresh basil leaves. A little sprinkling of sea salt on the tomatoes is all you need. Below that, I've got toasted pine nuts and honey. This one was my personal fave. Geoff's favorite was the strawberry with basil and balsamic glaze. I can't really think of anything that wouldn't be improved by balsamic glaze.
How to make Whipped Feta on Toast
To make this Whipped Feta, all you need to do is add a crumbled block of feta to a food processor, along with Greek yogurt, the zest of one lemon, a bit of honey, and some good olive oil. Blitz it all up until smooth and creamy. Check for seasoning, and add some salt if you think it needs it. If you want even more acidity, squeeze in just a bit of lemon juice.
Use good bakery bread for this. You can toast it in the oven afte brushing it with a bit of garlic oil if you want to get fancy, but this is just as good if you just use your toaster. Add the whipped feta to a dish, make up a bunch of toast, then spread your other toppings out on the table, and let everyone build the toast of their dreams. Just make sure they all wash their hands first.
FAQ
I always like a combination of salty and sweet, but I think you're only limited by your imagination here. Maybe fig and proscuitto or roasted red pepper and chorizo. Dig around in your fridge or see what looks good at the market. Experiment and see what you like.
If you want to make the whipped feta ahead of time, just store it in the fridge in an air tight container. It will keep for a few days. If you want to keep it nice and light, just give it a good whisk again before serving.

Ingredients
- 200 grams feta cheese, room temperature
- ½ cup plain Greek yogurt
- Zest of 1 lemon
- 2 teaspoons honey
- 1 tablespoon extra virgin olive oil
- Salt, to taste
- Bread, sliced and toasted
- Toppings of your choice
Instructions
- Crumble your feta into the bowl of a food processor. Add the Greek yogurt, zest your lemon right into the bowl, then drizzle in the honey and olive oil.Blitz this all together in your food processor until smooth. Taste it to see if you need salt, and give it a few more pulses to blend that in.
- Toast your favorite bread as you like and spread your whipped feta on top. Add your favorite toppings.
- Store any leftover whipped feta in an air tight container in the fridge.
