Gammon Steak with Pineapple Salsa is sweet and salty and fresh and hearty. Use canned pineapple and fresh mint to bring a bit of brightness to this simple and quick dinner for two.
Though I have a small coven that I try to meet with regularly at sabbats at the very least, I am mostly a solo practitioner. One of the things I love most about kitchen witchcraft is that I can bring my practice into something that I do regularly. Every single day without fail, my husband and I need to eat dinner. It might actually be one of the flaws of humans. These big brains need constant refueling. It can get tedious.
In a way, it's almost easier to make diner for six people than for just two people. It would take us weeks to eat through a whole ham. But it's so good, I don't want to miss out. Enter gammon steaks or ham steaks. If you're a kitchen witch with a small family, these are perfect. And they only take about 10 minutes to cook, so you can get some tasty protein on your plate without taking hours and making enough for a small army.
What makes Gammon Steak so awesome?
These particular gammon steaks get an extra boost of flavor from a quick and easy pineapple salsa. Take it easy on yourself and use pineapple chunks canned in juice. Chop up a jalapeno, green onion, and some fresh mint along with the pineapple and let it all hang out while you cook your gammon steaks to let the flavors and the energy mingle.
We'll also reduce some pineapple juice in the pan just after the gammon is cooked then glaze the gammon in the sticky sweet pineapple reduction before serving. Ham and gammon can be so salty, the bright acidity of the pineapple and the earthy mint combined with a touch of heat from the jalapenos really bring so much interest to an otherwise slightly mundane protein.
Magical properties of pineapple
Pineapple is known to be a symbol of hospitality, so it would be perfect to keep a pineapple plant or another type of representation near the entrance to your home to welcome people in. Unsurprisingly, they're associated with masculine energy and the sun.
Historically, pineapples would have been quite rare and expensive, so they're also associated with wealth and prosperity. Cook with pineapple to draw in some prosperity of your own, or bake with pineapple and share it with a friend as a housewarming gift. (Source: Elune Blue Pinterest)
The combination of pineapple and mint in this recipe could definitely be a great little prosperity spell. The jalapeno could be called upon to speed things along as well. For details on other ingredients in this recipe, check the Kitchen Magick page.

To make this extra awesome, we'll chop up some canned pineapple chunks, green onion, jalapeno, and fresh mint and combine it in a bowl before we get started. Let that hang out while you get on with things, and be sure to keep the juice from the pineapple can.
Once your gammon has cooked, add some pineapple juice to the pan. Scrape up any bits that were left in the pan, then crank up the heat to reduce the pineapple juice by about half. Then add the gammon steaks back into the pan and give them a turn in the glaze before serving. Spoon a bit of your pineapple salsa over the top of each steak and feel wealthy indeed.
