These sweet potato pancakes bring a little autumn sweetness to everyone's favorite breakfast. With a hint of cinnamon and nutmeg, you'll absolutely love this little morning treat.
You may have noticed I don't have a lot of vegetable recipes on my site. That's because I'm a middle aged woman who still hates vegetables. I could blame my closed taste in human design. Or maybe I'm a super taster. Or possibly I have that gene that makes you extremely averse to bitterness. Maybe I'm just a spoiled brat. It's hard to tell. But somehow my mind feels like eating broccoli is nearly on par with eating a bucket of squirming maggots.
I love sweet potatoes, though. Just the other day I tested a butternut squash gnocchi recipe that sounded great on the page, but then it was just boring. My husband and I practically said at the same time, I wish it was sweet potato. Maybe if all vegetables tasted like candy the way sweet potatoes do, I'd be more excited to eat them.
What makes Sweet Potato Pancakes so awesome?
These pancakes take my favorite breakfast treat and make them even awesomer by adding mashed sweet potato, cinnamon, and nutmeg. The autumn spice and the bright orange chunks of sweet potato make this the perfect breakfast for a blustery fall morning. It's warming and a little bit indulgent but also somehow kind of healthy. I don't look for logic when there's this much deliciousness.
Serve this with your favorite bacon or breakfast sausage. Top them with butter and maple syrup, and make a sprinkling of chopped pecans if that's your jam. If you're a meal prepper, I definitely recommending roasting up a few sweet potatoes on a Sunday, as this is just one awesome way to use up mashed or pureed sweet potato. And if you're having guests for the weekend, you might want to make a double batch. They're pretty irresistible.

Here's everything you'll need to make this recipe. All the details are in the recipe card below.
- Flour - all-purpose or plain
- Leaveners - we're using both baking powder and baking soda, aka bicarb
- Salt
- Brown sugar
- Spices - we've got cinnamon and nutmeg here, but you could change it up slightly to suit your taste so long as you keep the overall amount of ground spices the same
- Egg
- Buttermilk - or kefir
- Butter - unsalted and melted
- Sweet potato - roasted and mashed or pureed
Tips for making Sweet Potato Pancakes
First off, I highly recommend roasting your sweet potatoes the day before. You'll need about ¾ cup of mashed sweet potato, so one big one will do. Roast two if your sweet potatoes are on the smaller side. There are plenty of delicious uses for leftovers, including mixing in some butter, salt, and cinnamon, and slapping that on some toast. It takes at least 45 minutes, but once roasted, you can just stash them still in their skin in the fridge for a day or two.
Otherwise, it's pretty standard pancake procedure. Dry ingredients mixed together in one bowl, wet ingredients in another. Once you've got your basic wet ingredients combined, you'll stir in the sweet potato. If you want it extra smooth, you might want to puree your sweet potatoes in a food processor. If you want a few rustic chunks, just a regular potato masher will do. Then just bring the wet and the dry together and fold to combine.
Cook your pancakes in a hot skillet. This will be a fairly thick batter, so you may need to coax it to spread when you first add it to the pan. Cook on both sides for 2-3 minutes until golden brown and serve piping hot with butter and maple syrup.

Ingredients
- 1 cup all-purpose or plain flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda, aka bicrbonate of soda
- ¼ teaspoon salt
- 1-½ tablespoons brown sugar
- ½ teaspoon cinnamon
- ½ teaspoon nutmeg
- 1 egg
- 1-½ cups buttermilk or kefir
- 2 tablespoons unsalted butter, melted
- ¾ cup mashed sweet potato
Instructions
- In a large mixing bowl, gently whisk together flour, baking powder, baking soda, salt, brown sugar, cinnamon and nutmeg until combined. Set aside.
- In a separate bowl or a measuring jug, combine egg, buttermilk, and melted butter. Whisk until smooth, then add in the sweet potato, and stir that in as well. It will not be perfectly smooth.
- Add the wet ingredients to the dry ingredients, and fold them together with a rubber spatula. You want to work quickly and gently. A few lumps in the batter is no big deal. If you overmix, you'll end up with tough, rubbery pancakes.
- Preheat your skillet and add a bit of butter or neutral oil. Scoop your pancake batter into your hot skillet about ½ cup at a time, and cook for about 3 minutes before flipping and cooking on the other side. You'll know they're ready to flip when they start to set around the edges.
- Serve hot with your favorite toppings.
