My family loved camping, and as a kid, I liked the romantic ideal of being out in nature and playing with the fairies. But as I grew, my concerns became more about comfort and cleanliness. I love the outdoors, but only for a few hours at a time.
As a cook, I also don't relish the uncertainty and imprecision of cooking over fire or live coals. My kitchen is clean and predictable. I get that this probably sounds boring to some people. I admit that I am dull and unadventurous in some ways. I've learned to accept this about myself. It's fine.

I envision these Bacon Egg & Cheese Grilled Potatoes as a totally awesome luxury camping breakfast. There's crispy bacon, gooey cheese, a fried egg with a runny yolk, and some sour cream spiked with hot sauce. Sprinkle it with some chopped chives or green onions, and you've got a packet of pure deliciousness.
You could also make this indoors in the oven, which is what I did. Either way, you're gonna want a whole packet to yourself. I was sad when mine was finished. You could also add some bell peppers or chopped jalapenos to the packet for a little extra fire. Whatever veggies you have hanging around could go inside if you're into that. Whether you're camping, glamping, or just rounding out the summer with some delicious brunch at the kitchen table, everyone will love this.
How to make Bacon Egg & Cheese Grilled Potatoes
Start with crispy bacon, then add this, along with any bacon grease over chopped potatoes and season with salt, pepper, and tons of cayenne. Drizzle some oil, give it a toss, and fold this up in a foil packet. Cook it on the grill or in a hot oven until the potatoes are tender.
While this is in the oven, mix some sour cream and some hot sauce in a little dish for drizzling later.
When your potatoes are cooked through, open up the foil packet and sprinkle in plenty of cheddar cheese. You can close up the packet or pop it back in your turned off oven for a couple minutes to melt the cheese while you make a fried egg that's perfect for you. Add your egg to your potatoes, then drizzle on lots of spicy sour cream.

Ingredients
- 4 slices streaky bacon
- 500 grams (1 pound) baby potatoes, chopped
- 2 tablespoons olive oil or rapeseed oil
- 1 teaspoon cayenne pepper
- salt and pepper, to taste
- ¼ cup sour cream
- 1 tablespoon hot sauce
- ¼ cup grated cheddar cheese
- 2 eggs
Instructions
- Fire up your grill or preheat your oven to 200 C (400 F). Lay out two large sheets of foil to build your potato packets on.
- Chop your bacon into one-inch pieces and cook it over medium heat in a skillet until crisp. Transfer the bacon and any grease to a large mixing bowl.
- If your potatoes are larger than bite-size, chop them in half, quarter them, or cut them however you need to so that each piece is one bite. If you have any potatoes small enough to cook whole, pierce them with a fork a couple times. Add the chopped potatoes to the mixing bowl with the bacon.
- Drizzle the oil over the potatoes, and sprinkle each one with cayenne, salt, and pepper. Give them a toss to make sure your seasonings are evenly distributed.
- Divide the bacon and potatoes between your two pieces of foil. Then carefully fold up your foil packet. You want to create space around the potatoes, but you also want the packet to be totally sealed to keep in steam.
- If you're cooking these on a charcoal grill or campfire, you can nest them right into the white embers once the fire has died down. If you have a gas grill, put them in a spot that's not directly over the flame and keep the lid closed. I cooked mine in the oven. Whichever method you choose, they'll take about an hour. The potatoes should be tender and able to easily pierce with a sharp knife when they're done.
- While your potatoes are cooking, stir together the sour cream and hot sauce in a small bowl, then stash this in the fridge for later.
- When your potatoes are ready, sprinkle some grated cheese over each packet. You can just loosely close up the foil or pop them back in your turned off oven to melt the cheese.
- Fry an egg just the way you like it. I fry mine over medium heat in butter until the whites are just barely set, then flip the egg, take the pan off the heat, then serve it up. Do you eggs in your favorite way. Add an egg to each foil packet.
- Drizzle on the spicy sour cream and dig right in.
