So I know there was a hot minute during lockdown 2.0 when everyone ever was baking banana bread, but here's the thing. I'm super bad at following trends. There was definitely a time in my life where I believed that if something was really trendy, it was obviously terrible. I've since grown out of that a bit since it was this belief that caused me to not read Harry Potter until 2001.
But I still strongly believe that you shouldn't like something just because it's trendy or conversely, stop liking something because it's no longer trendy. Do what you like when you like because as long as you're not being a dick, the only person you need to worry about pleasing is yourself. And baking with bananas has been around long enough that I think it's safe to consider it trend-proof.
I'm not a fan of bananas myself, but I'm also not a fan of food waste, so it's always good to have a reliable and tasty recipe up your sleeve to keep black bananas out of the bin. These Chocolate Banana Muffins are going to become your new favorite. I prefer banana muffins to banana bread because they're easy to transport and share. These are ideal to bring to work, especially once you start to have in-person meetings again. People can hardly complain that they're on a diet when you're giving them fruit.
But there's also chocolate, so it makes them feel a bit more indulgent and special. These muffins are light, fluffy, and moist with a satisfying cocoa punch. They'll definitely keep you smiling.
How to make Chocolate Banana Muffins
I know for a fact these muffins are so easy to make, a four year old can do it, with a little help from people who can read, obviously. Start by using your mixer or a masher to mash up your bananas. You want them quite mushy but not pureed. Then mix in some oil, eggs, and brown sugar to complete the wet ingredients. Next, you'll add your flour, cocoa powder, and baking soda. Mix until combined, but don't overdo it or your muffins won't stay tender.
Fill your muffin cups nearly full. These should rise beautifully and give you a lovely dome. 15 minutes in a 400 F oven usually does the trick. Let them cool long enough so that they don't burn you. Like all muffins, they're best eaten warm and are really only at their peak for a couple of days. They're good enough that this shouldn't really be a problem.

Ingredients
- 3 very ripe bananas
- ½ cup vegetable oil
- 2 eggs
- ½ cup (100 grams) brown sugar
- 1-½ cups (225 grams) all-purpose flour
- 3 tablespoons cocoa powder
- 1 teaspoon baking soda
- pinch of salt
Instructions
- Preheat your oven to 400 F (200 C) and pop some muffin papers into 12 muffin tins.
- In a large mixing bowl, mash your bananas with an electric mixer. Mix in the oil, eggs, and brown sugar.
- Turn your mixer down to low and mix in the flour, cocoa powder, baking soda, and salt until just combined.
- Scoop your batter into your waiting muffins pan, filling them about two-thirds full.
- Bake for about 15 minutes or until a toothpick comes out clean. Allow to cool for a few minutes and eat warm, or allow to cool completely and store in an air tight container.
