These Marshmallow Brownies are a real treat. Fudgy brownies are topped with toasted marshmallows and a sweet chocolate icing. These chocolaty darlings will be a hit with basically everyone.
There were many years of my life when I thought I might like to be a professional baker. I loved making sweet treats, so the obvious answer was to bake for other people from a food truck or a cute little cafe. What makes Marshmallow Brownies so awesome?
While I certainly won't get high marks for consistent sizing, these Marshmallow Brownies are as close to perfect as it gets. The brownie layer is rich and fudgy, the toasted marshmallows are spongy and sweet, and the chocolate icing is simply luxurious. Anyone who likes chocolate is gonna love these. From little kids to great grandparents, people will be begging for cheeky seconds.
You could bake these for a party, take them on the road, or even put a candle in them as a birthday treat. From my experience, anyone who shows up with a box full of brownies is the coolest kid in the room. So get in your kitchen and get baking. You can't buy love, but offering up a brownie will probably get you there sooner.
Magical Properties of Sugar
While the herb marshmallow is commonly used in witchcraft, it's not generally found in confectionary. The marshmallows we're using here are made primarily of sugar, egg white, gelatin, and air. Sugar is very useful in witchcraft spells, and marshmallows could certainly be a stand-in for that ingredient.
Sugar is essentially metaphysical bribery. Add something sweet to any attraction spell to "sweeten the deal." Sugar makes your spell irresistible. For this reason, it's commonly used in spells for love and romance. Call on the attraction power of sugar in your kitchen witchcraft, or add sweet things like marshmallows to charm bags or spell jars to draw what you need to you a little more quickly.

Ingredients
Here's everything you'll need to make this recipe. You'll find all the details in the recipe card below.
- Butter - unsalted
- Chocolate - semi-sweet chocolate chips work great, but chopped chocolate is also good
- Sugar
- Eggs
- Vanilla extract
- Flour - all-purpose or plain
- Cocoa powder
- Salt
- Mini marshmallows
- Powdered sugar - aka confectioner's sugar or icing sugar
- Milk - any dairy will do, in fact, plant-based milks would probably also work
Tips for making Marshmallow Brownies
In some ways, brownies are more complicated than cakes because there are more steps, but the batter is much more forgiving. You'll start by melting your butter and chocolate together gently, either in the microwave or in a saucepan over low heat. Either way, you'll want to stir it frequently. Once that's all melted, give it at least 10 minutes to cool down.
In a separate bowl, you'll beat together the eggs and sugar until pale and fluffy, the fold in the chocolate mixture and the vanilla. Then you can sift over your dry ingredients, and fold those in as well. When it's all mixed, you'll bake your brownies until their just set. I like them gooey, so you won't be able to test these with a toothpick. There shouldn't be any wobbles in the pan, though.
Then scatter a layer of mini marshmallows on top. You can either pop them under the broiler for a minute or two until their golden or use your kitchen torch to toast them. Just be careful if you've lined your pan with parchment as it can burn.
Then in yet another bowl, you'll melt some butter, then whisk in the cocoa powder follwed by the powdered sugar. It will be very thick. You'll thin it out with some milk until it's just barely pourable. You don't want it to be too loose, but too thick and you won't be able to spread it. It will set quite quickly, so work fast to gently coax it to the edges of your brownies.
Then the hardest part is to let the whole thing cool. I actually like to chill them for at least 4 hours before cutting into them and trying not to eat all of them at once.
Marshmallow Brownies are the freakin' best and there's really nothing else to say about that. Just make them. It's gonna be awesome.

Ingredients
For the brownies:
- ½ cup (4 ounces) unsalted butter
- 6 ounces semi-sweet chocolate chips
- 1 cup caster sugar
- 3 eggs
- 1 teaspoon vanilla extract
- ½ cup flour
- ¼ cup cocoa powder
- ½ teaspoon salt
- Approximately 2 cups mini marshmallows
For the icing:
- ¼ cup (2 ounces) unsalted butter
- ⅓ cup cocoa powder
- 2 cups powdered sugar
- ¼ cup milk
Instructions
For the brownies:
- Preheat your oven to 350 F (175 C) and line an 8x8 inch baking pan with parchment paper.
- Add your chocolate chips and butter to a small saucepan and place over the lowest possible heat. Stir frequently until melted and set aside to cool for about 10 minutes. You could also do this in the microwave, stirring in 30 second intervals.
- Add eggs and sugar to a large mixing bowl and beat with an electric mixer for about 3 minutes or until pale and fluffy.
- Add the chocolate mixture to the eggs, and fold this in with a rubber spatula. Then stir in the vanilla extract as well.
- Sift your flour, cocoa powder, and salt over the batter, and fold in the dry ingredients. When everything is fully combined, transfer the batter to your baking pan.
- Bake for 25-30 minutes. You want the brownies to be set but not hard around the edges. Check them at 25, and if there's no wobbles, go ahead a pull them out. Brownies are always better underbaked than overbaked.
- Scatter your mini marshmallows on top of your brownies forming a single layer. You can either switch your broiler on and pop them back in the oven for a minute or two or use your kitchen torch to toast the marshmallows. You're looking for golden brown, not charred.
For the icing:
- Melt the butter in the microwave or over the stove, then add it to a mixing bowl. Then whisk your cocoa powder into the melted butter.
- Add your powdered sugar and milk, and gently whisk to make a smooth icing.
- Pour this over your brownies and gently spread it to the edges. You'll want to work fairly quickly before the icing sets.
- Let your brownies cool completely or better yet, chill them in the fridge for at least 4 hours before slicing and serving.
