When you see images of a witch's cabin in the woods, it's always overflowing with stuff. It's a very romantic image of herbs hanging from the rafters, shelves packed with apothecary bottles, and piles of books and pieces of parchment strewn across every surface. While this is lovely to look at in a work of art, there's no way I could actually live like that. I'm much more of a streamline minimalist.
The one thing I do hoard is recipes. I have saved more recipes online and in books than I could ever possibly try in my lifetime, but I'm not going to stop. This means I'm sometimes a bit behind on food trends, but I don't really care. To me, the only thing that matters is that the food tastes awesome. And if I stumble across an old trend that makes it a little bit healthier, that's a bonus.
What makes these Healthy Waffles so awesome?
This recipe is originally from Jessica Merchant's book, Seriously Delish. It features whole wheat waffles made with coconut oil to make them a bit healthier. Fine, cool, whatever. I love the added depth of flavor and texture that the whole wheat flour provides. It's almost toasty and makes the waffles nice and crisp on the outside and still fluffy on the inside.
The waffles are flavored with lemon zest and a bit of lemon extract to really punctuate the flavor. Instead of poppy seeds, we're adding chia seeds here which are nutrient dense and high in fiber and protein. They also add to the crunch of the waffle.
Now you can certainly slather these in butter and syrup, or use your juice from your lemons to make a lemon syrup. I get that it's overall not necessarily "nutritious," but for a picky eater like me who loves to indulge, it's all about baby steps. This tastes good, and it's a bit better for you than other waffles. The deliciousness is really all that matters.

Yes, these are the same chia seeds you'll find in the 80's novelty gift, Chia Pets. These seeds were first used by ancient Aztec and Mayan peoples. They're believed to carry the energy of protection and health. They can also be used in spells for transformation and change, which makes sense given what happens to them when you add them to the element of water. Tips for making Healthy Waffles with Lemon & Chia Seeds
This is a basic method of combining dry and wet ingredients separatly, then mixing them together. There's no need to whip egg whites for these waffles. You do want to make sure your waffle maker is preheated before you begin cooking though. I always switch it on first thing so it can heat up while I'm mixing.
As I said, we're simply mixing together all our dry ingredients in a big bowl and giving it a stir to make sure everything is fully combined. Then in another bowl or even a big measuring jug, you can combine all your wet ingredients and whisk them together completely. Then when you bring the two together, you want to work quickly and gently to keep your waffles tender. Fold in the chia seeds, and you're ready to go.
Every waffle maker is different, so your yield may vary, and your cooking time may vary. I got five waffles this time, and my machine has them perfectly cooked in five minutes. Check the instructions on your own waffle iron and do what you know works.
I like a classic butter and syrup situation. You could also make a lemon glaze with powdered sugar and the juice from the lemon you zested earlier. If you want to keep it a bit healthier, try a drizzle of honey or some berries macerated in a pinch of raw sugar.

Ingredients
- 1-½ cups whole wheat pastry flour
- 2 tablespoons cornstarch
- 2 tablespoons sugar
- 2 teaspoons baking powder
- ½ teaspoons baking soda
- ¼ teaspoon salt
- 1-½ cups buttermilk
- ⅓ cup coconut oil, melted and slightly cooled
- Zest of 1 lemon
- 1 egg
- ½ teaspoon lemon extract
- 1 teaspoon vanilla extract
- 2 tablespoons chia seeds
Instructions
- Preheat your waffle iron so it's ready to go when your batter is finished.
- In a large mixing bowl, gently whisk pastry flour, cornstarch, sugar, baking powder, baking soda, and salt to combine and work out any lumps.
- In a separate container such as a large measuring jug, whisk together buttermilk, melted coconut oil, lemon zest, egg, and lemon and vanilla extracts until well combined.
- Add your wet ingredients to your dry ingredients and gently and quickly fold and stir these together until combined Don't panic about a few lumps. Add your chia seeds and fold those in as well.
- Add the batter to your waffle maker and cook until golden brown and slightly crisp on the outside. Every waffle maker is different, so do what works best for yours in terms of how much batter to add. I get five waffles from my waffle maker out of this recipe. They're perfectly cooked in five minutes.
- Serve your waffles hot with butter and maple syrup or whatever your favorite waffle toppings are.
